lemon cordial....

this refreshing, tangy lemon cordial is such a nice drop to have on these hot summer days...yes it is still stinking hot in these parts...and better yet, is super easy to make




8 cups cold water
1 kg sugar
8-10 lemons - rind and juice
2 tsp citric acid
2 tsp tartaric acid
2 tsp epsom salts

 Peel and juice the lemons, place into a pot with the water and sugar and bring to a gentle simmer (I normally throw the rest of the lemon into the pot too to intensify the flavour), once the sugar has dissolved stir through the remaining ingredients and leave to cool.
Once cold strain and bottle.  Dilute with chilled water....enjoy!!

I'm not too sure how long this will last in the fridge as it goes fairly fast around these parts but we have had it for up to a few weeks with no problems

Yes this looks delicious Tammi. The weather here is rainy and about 18 degrees, this recipe sure is tempting though.

Thanks so much for sharing this recipe Tammi...i love lemon cordial but have never tried to make my own...i wonder if it would work with the lemon juice i have frozen or do you need the peel as well?

I haven't seen one with the addition of epsom salts before but co-incidentally I am magnesium deficient at the moment and this cordial recipe would be very valuable. Thanks for sharing it. It sounds like an old recipe, where did you get this one from?
